Manitoba flour is a flour obtained from grinding the common wheat variety “Manitoba”. It is called a “strong” flour to distinguish it from other flours, weaker (W > 350). The main characteristics of this flour, beyond strength, are a high presence of proteins and a considerable water absorption power, which makes the dough obtained soft and tenacious at the same time, suitable for more complex processes, such as the preparation of leavened confectionery products.
