Vinification: the pressing of the grapes is soft and the alcoholic fermentation with maceration on the skins at a controlled temperature of 28 ° c lasts 12 days. After malolactic fermentation, the wine matures first in large oak barrels for 6 months and then in vitrified cement tanks. After bottling it refines for 6-8 months.
Organoleptic notes: the color is intense ruby red. It has a complex and enveloping aroma, with fruity notes of marasca cherry and raspberry and hints of spices and vanilla pleasantly linked to each other. Its flavor is rich, ample and velvety, with great structure and aromatic persistence.
Pairings: excellent with red meat dishes and medium-aged cheeses. Also excellent with appetizers of cold cuts and tasty cold cuts, we also recommend the combination with grilled tuna and sweet and sour rabbit.
